Lentil Rice with Chicken Shawarma and Salad

Recipe by Dr. Linda Khoshaba and Hellen Khoshaba (mom)

Ingredients:

Rice/Lentils:
Orange lentils 2 cups
4 cups of water - boil it
1 cup of rice Basmati rice
1 tsp of Better than bouillon
1 yellow large onion
½ tsp Kosher salt
Chicken:
3 chicken breasts, sliced thin
4 tablespoons Olive oil
1 garlic clove
1 tablespoon apple vinegar cider
2 tablespoons chicken shawarma spice, seasoning
½ tsp of crushed black pepper
Salad:
1 head of Romaine lettuce
1-2 Tomatoes
4 Persian Cucumbers
2 Green onions
4 tsp of Olive oil
1 full Lemon squeezed
1 tsp of Dried Mint
½ tsp of Kosher salt
Lentil Rice with Chicken Shawarma and Salad

Directions:

Lentil Rice Steps:
  • Boil lentils, until cooked, 20 mins, put on the side
  • Chop 1 yellow large onion
  • Put some olive oil 3 tsp in the pan, saute the onion until caramel 
  • Put 1 tsp of better than bouillon 
  • Put ½ tsp of salt 
  • Add rice - saute the rice in this mix
  • Then add lentils
  • Then add 2 cups of water 
  • Reduce heat to low 
  • Cover and cook low heat until rice is cooked
Chicken Shawarma:

In a mixing bowl, add: 

  • 3 Sliced chicken breasts 
  • Add olive oil 
  • Add Crushed garlic 
  • Add apple cider vinegar 
  • Add black pepper
  • Add chicken shawarma spice 

Mix well and chill in fridge for 20 mins 

Cooking prep:

    • In a heated pan, add the chicken mixture and cook on medium - high heat for 10 mins until cooked through.
Add the chicken on top of the rice/lentil
Salad Steps:

Chop the Romaine lettuce, Tomatoes, Persian Cucumber, Green onions 

  • Add Olive oil 
  • Add Lemon 
  • Add Dried Mint 
  • Add Kosher salt
  • Mix well and serve on top of the rice and chicken
