Beet Salad Recipe

Fresh Beets
White onion (thinly sliced on top)
Walnuts (roughly chopped)

  • Boil Beets: Boil fresh beets until soft, let cool, peel, and cut into pieces.
  • Chop Herbs: Finely chop cilantro and chives.
  • Slice Onion: Thinly slice the white onion.
  • Prepare Walnuts: Roughly chop a handful of walnuts. For an extra touch of flavor, you can toast the walnuts in a dry pan over medium heat until they're just beginning to brown and become fragrant. Let them cool before adding to the salad.
  • Dressing: In a bowl, mix lemon juice, olive oil, and salt to create your dressing.
  • Mix Salad: Combine the beets, herbs, onion, and walnuts in a bowl. Pour the dressing over the salad and toss everything together until well combined.
