Tabbouleh
Preparation Time:

Tabbouleh Recipe ("Tabbouli" or "Tabouli")

Ingredients:

1 cup bulgur wheat
1 ½ cups boiling water
2 cups fresh parsley, finely chopped
½ cup fresh mint, finely chopped
4-5 green onions, finely chopped
2 medium tomatoes, diced
1 cucumber, diced
¼ cup extra virgin olive oil
¼ cup fresh lemon juice
Salt and freshly ground black pepper to taste
Tabbouleh or Tabouli

Directions:

1. Prepare the Bulgur:

  • Place the bulgur wheat in a large bowl.
  • Pour the boiling water over the bulgur, cover, and let it sit for about 15-20 minutes until the bulgur absorbs the water and becomes tender.
  • Once softened, fluff the bulgur with a fork to separate the grains.

2. Combine the Vegetables and Herbs:

  • Add the chopped parsley, mint, green onions, tomatoes, and cucumber to the bulgur.
  • Gently mix until all ingredients are well combined.

3. Dress the Salad:

  • In a small bowl, whisk together the olive oil and lemon juice.
  • Pour the dressing over the bulgur mixture.
  • Season with salt and freshly ground black pepper to taste.

4. Toss and Serve:

  • Gently toss the salad to ensure the dressing is evenly distributed.
  • For the best flavor, let the Tabbouleh sit for about 30 minutes before serving to allow the flavors to meld.
  • Serve at room temperature or chilled as a refreshing side dish or light meal.
