Scrambled Eggs with Spinach and Tomatoes Recipe

Ingredients:

4 large eggs
1 cup fresh spinach, chopped
1 medium tomato, diced
1/4 cup feta cheese, crumbled (optional)
1/4 cup onion, finely chopped
2 cloves garlic, minced
2 tablespoons olive oil
Salt and pepper to taste
Fresh basil or parsley for garnish (optional)
A pinch of red pepper flakes for a hint of
spice (optional)
A squeeze of fresh lemon juice for added
brightness (optional)

Directions:

1. Crack the eggs into a bowl and whisk them until well
combined.

2. Chop the spinach, dice the tomato, finely chop the onion,
and mince the garlic.

3.Heat the olive oil in a non-stick skillet over medium heat.

4.Add the onion and garlic to the skillet and sauté until
fragrant and translucent, about 2 minutes.

5.Add the chopped spinach and diced tomato to the skillet.
Cook until the spinach is wilted and the tomatoes are
soft, about 3-4 minutes.

6.Pour the beaten eggs into the skillet, stirring gently to
combine with the vegetables.

7.Cook the eggs, stirring frequently, until they are softly set,
about 3-4 minutes.

8.If using, sprinkle the feta cheese over the eggs and stir
until slightly melted and incorporated.

9.Optional: Add a pinch of red pepper flakes for a hint of
spice.

10.Season with salt and pepper to taste.

11.Optional: Finish with a squeeze of fresh lemon juice for
added brightness.

Serve:

  • Transfer the scrambled eggs to a serving plate.
  • Garnish with fresh basil or parsley if desired.
