Savory Beef Kebab with Fresh Herbs

Ingredients:

For the Beef Mixture:
1 lb (450g) lean ground beef
2 tbsp extra virgin olive oil
2 tbsp balsamic vinegar
1 tbsp fresh lemon juice
1 tbsp fresh parsley, finely chopped
1 tbsp fresh oregano, finely chopped
2 cloves garlic, minced
1/2 tsp turmeric powder
1/2 tsp black pepper
Salt to taste

For the Vegetables:
1 yellow bell pepper, cut into 1-inch pieces
1 green bell pepper, cut into 1-inch pieces
1 small red onion, cut into wedges
1 small eggplant, sliced into rounds
1 cup mushrooms, halved
Fresh basil or parsley for garnish (optional)

Directions:

  • Prepare the Beef Mixture:

    • In a large mixing bowl, combine ground beef with olive oil, balsamic vinegar, lemon juice, parsley, oregano, garlic, turmeric powder, black pepper, and salt. Mix well until the beef is evenly seasoned.
  • Shape the Beef:

    • Divide the seasoned ground beef into small portions and form each portion into small, compact sausage-like shapes around the skewer (similar to kofta-style kebabs). Ensure they’re firm and secure on the skewers.
  • Marinate the Beef:

    • Place the skewers with the beef in the refrigerator to marinate for at least 1 hour. This allows the flavors to infuse into the beef.
  • Preheat the Grill:

    • Preheat your grill or stovetop grill pan to medium-high heat.
  • Assemble the Kebabs:

    • Alternate the beef portions with pieces of bell peppers, red onion, eggplant, and mushrooms on each skewer for a vibrant look.
  • Grill the Kebabs:

    • Place the skewers on the grill and cook for 12-15 minutes, turning occasionally, until the beef is cooked through and the vegetables are lightly charred and tender.
  • Serve and Garnish:

    • Remove the kebabs from the grill and let them rest briefly. Garnish with fresh basil or parsley, if desired, and serve with tzatziki sauce or a simple grain salad.
