Mediterranean Chicken Wrap with Tzatziki Sauce

Ingredients:

For the Chicken:

2 boneless, skinless chicken breasts
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon garlic powder
Sea salt and black pepper to taste

For the Tzatziki Sauce:

1 cup Greek yogurt
1 cucumber, finely diced
1 clove garlic, minced
1 tablespoon fresh dill, chopped
1 tablespoon fresh lemon juice
Sea salt and black pepper to taste

For the Wrap:

4 whole grain wraps
2 cups baby spinach
1 cup cherry tomatoes, halved
1 avocado, sliced
1⁄4 red onion, thinly sliced
1⁄2 cup crumbled feta cheese
1⁄4 cup Kalamata olives, sliced

Directions:

  •  Prepare the Chicken:
    ○ Preheat a grill or grill pan to medium-high heat.
    ○ Rub the chicken breasts with olive oil, oregano, garlic powder, sea salt, and black
    pepper.
    ○ Grill the chicken for about 6-7 minutes per side, or until fully cooked. Let it rest for
    a few minutes, then slice it into thin strips.
  •  Make the Tzatziki Sauce:
    ○ In a medium bowl, combine the Greek yogurt, diced cucumber, minced garlic,
    chopped dill, lemon juice, sea salt, and black pepper. Mix well and set aside.
  •  Assemble the Wraps:
    ○ Lay out the whole grain wraps on a clean surface.
    ○ Spread a generous amount of tzatziki sauce onto each wrap.
    ○ Layer with baby spinach, cherry tomatoes, avocado slices, red onion, crumbled
    feta cheese, and kalamata olives.
    ○ Add the grilled chicken strips on top.
    ○ Roll up the wraps tightly, tucking in the sides as you go.

Cut the wraps in half, if desired, and serve immediately.
