Dubai Inspired Healthy Chocolate

Golden Maca Pistachio (#1 Dubai Chocolate Inspired)

Recipe by: Dr. Linda Khoshaba

Ingredients:

Chocolate Base:
1 cup dark chocolate (85% cacao or higher), melted
2 tbsp organic tahini (sesame paste)
1 tbsp maca root powder
1 tbsp raw honey or pure maple syrup
½ tsp cinnamon
¼ tsp sea salt
¼ tsp cardamom powder
2 tbsp chopped pistachios
Edible gold flakes (optional)

Creamy Pistachio Sauce:
½ cup raw pistachios (soaked for 1 hour, then drained)
2 tbsp unsweetened coconut cream (for silkiness)
1 tbsp raw honey or maple syrup
½ tsp vanilla extract
A pinch of sea salt
2 tbsp unsweetened almond milk (adjust for desired consistency)

Crispy Kataifi Layer:
1 cup kataifi pastry
1 tbsp grass-fed ghee or coconut oil
1 tbsp raw honey

Directions:

  • For the Kataifi :

    • Toast the kataifi pastry in a dry pan over medium heat until golden and crispy.
    • Stir in ghee (or coconut oil) and honey to coat the strands, then remove from heat.
    • Spread onto parchment paper and let it cool and crisp up.

     

  • For the Chocolate:

    • Melt the dark chocolate in a double boiler or microwave (20-sec intervals).
    • Stir in tahini, maca powder, cinnamon, cardamom, and sea salt until smooth.
    • Pour into silicone molds or onto a parchment-lined tray in small rounds.
    • Sprinkle with toasted Kataifi and chopped pistachios before the chocolate sets.
    • Refrigerate for 30 minutes until firm.

     

  • For the Pistachio Sauce:

    • Blend soaked pistachios, coconut cream, honey, vanilla, sea salt, and almond milk in a high-speed blender until smooth and creamy.
    • Adjust the consistency by adding extra almond milk if needed.
