Sweet Potato Recipe

Gluten & Dairy-Free, Gut-Loving Sweet Potato Pancakes

Ingredients:

½ cup mashed sweet potato (cooked and cooled)
1 large egg
2 tablespoons collagen powder (non-gelatinized)
½ teaspoon vanilla extract
⅛ teaspoon ground cinnamon
⅛ teaspoon ground ginger (optional, for added flavor)
A pinch of sea salt
1 tablespoon extra virgin coconut oil (for frying)
½ cup fresh fruit or berries, to garnish
Sweet Potato Pancake

Directions:

  • Prepare the Batter:

    • In a high-speed blender or mixing bowl, combine the mashed sweet potato and egg. Blend or whisk until smooth and creamy (about 30 seconds to 1 minute).
  • Add Gut-Loving Ingredients:

    • Add the collagen powder, cinnamon, ginger (if using), vanilla extract, and sea salt. Blend for another 10 seconds, or whisk until fully combined.
  • Heat the Pan:

    • Heat a non-toxic or cast iron skillet over medium heat and add the coconut oil, allowing it to melt and coat the pan.
  • Cook the Pancakes:

    • Spoon the batter into the pan to form pancakes about 3 inches in diameter. Cook for 2–3 minutes, or until bubbles form around the edges.
  • Flip and Finish:

    • Carefully flip the pancakes and cook for an additional 1–2 minutes, until both sides are golden brown and the centers are cooked through.
  • Serve and Garnish:

    • Stack the pancakes on a plate and top with your favorite fresh fruit or berries. Optionally, sprinkle with additional cinnamon for extra flavor.
