Banana Loaf with Pecans and Almonds Recipe

Ingredients:

3 ripe bananas (mashed)
1/3 cup melted coconut oil
1/2 cup honey or maple syrup
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1/4 teaspoon salt
1 3/4 cups whole wheat or almond flour
1/2 cup chopped pecans
1/2 cup chopped almonds

Directions:

Preparation:

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x5-inch loaf pan with a bit of coconut oil or line it with parchment paper.

Mixing:

  • In a large mixing bowl, combine the mashed bananas, melted coconut oil, and honey or maple syrup.
  • Add the eggs and vanilla extract, whisking until smooth.
  • Stir in the baking soda and salt.
  • Gradually fold in the flour until just combined (do not overmix).
  • Gently fold in the chopped pecans and almonds.

Baking:

  • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  • Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
