Assyrian Holiday Cookies (Keliche/Kleicha)

Ingredients:

Dry Ingredients:
6 cups flour
4 sticks of butter (room temperature)
1 cup ghee
1/4 teaspoon salt
1 tablespoon white sugar
1 teaspoon ground cardamom
Yeast Preparation:
2 packets of yeast
1/4 teaspoon sugar
Room temperature water

Dough Liquid Ingredients:
2 large eggs
2-3 cups milk (warm or room temperature)

Filling:
4 packages of dates
1/2 cup toasted sesame seeds
1 tablespoon butter or ghee
Optional: 4 cups walnuts (if desired for variety)

Egg Wash:
2 eggs
Vanilla extract (a few drops)

Directions:

Making the Dough:

  1. In a mixing bowl, combine flour, butter, ghee, salt, sugar, and cardamom. Mix the ingredients together until they are evenly combined.
  2. Prepare the yeast mixture: In a small bowl, combine yeast, sugar, and room-temperature water. Let it sit for 5-10 minutes to activate.
  3. Add the yeast mixture, eggs, and milk to the flour mixture. Mix until a soft dough forms, similar in consistency to cookie dough. Avoid over-kneading.
  4. Cover the dough with plastic wrap or a clean cloth and let it rest for 20 minutes to rise slightly.

Preparing the Filling:

  1. In a separate bowl, mix the dates with toasted sesame seeds. Add butter or ghee for a smoother texture.
  2. For added flavor and texture, you can incorporate finely chopped walnuts if desired.

Shaping and Filling:

  1. After resting, divide the dough into small balls and let them rest for another 5 minutes.
  2. Roll out each dough ball into flat circles or desired shapes.
  3. Place the date mixture onto one circle, cover with another dough circle, and seal the edges.
  4. Optionally, use a crinkle cutter for decorative edges.

Final Touches:

  1. Pierce the top of each piece with a fork to create small holes.
  2. Beat the eggs with a few drops of vanilla. Use a brush to apply the egg wash over the top of each piece.

Baking:

  1. Preheat the oven to 350°F (175°C).
  2. Bake the cookies for 20-30 minutes, or until golden brown. Avoid using the broiler to ensure even baking.
